Réalisé comme une crêpe faite à base de farine de riz enroulée et garnie principalement avec de tofu et des champignons noirs. La préparation de la pâte est spéciale, car il faut la garder mouillée, ce qui est l’origine de son nom. Ce plat est accompagné d’une sauce indispensable, préparée avec du nước mắm, un peu d’eau, du sucre, du citron, de l’ail et un peu de piment haché. Il s’agit ‘une spécialité du Nord du Vietnam.
