Ritù Pizza Al Taglio
Sliced pizza is the product of a relatively modern development of traditional bread, which was topped with tomatoes and mozzarella after the First World War. Ritùs pizza dough is acidified for 72 hours to make it easy to digest and has 80% moisture absorption. This means that if you take the pizza home with you, you only have to warm it up the next day to make it delicious and crispy again. The pizza is baked in a tin, while the special panini, which are made with the same dough, are baked on a stone.
