Amonggiana Light


Step 1.0

Peel and cut the eggplant lengthwise in slices of a cm approximately.

Step 2.0

Arrange the slices on a baking sheet covered with parchment paper. Sprinkle the eggplants with a pinch of salt.

Step 3.0

Bake at 250 degrees, until the eggplant slices are golden.

Step 4.0

In a saucepan brown the garlic, then add the tomato sauce, oregano and chopped basil.

Step 5.0

In an oven dish, pour a thin layer of tomato sauce, place a first layer of grilled eggplant slices as well as a layer of mozzarella in slices. Sprinkle with grated parmesan.

Step 6.0

Pour the rest of the tomato sauce, place a second layer of grilled eggplant slices and sprinkle with grated parmesan.

Step 7.0

Cook in the oven at 200 degrees for about 20 min or until the parmesan forms a golden crust.
