Chocolate profiteroles


Step 1

Prepare the cabbage paste: in a saucepan, bring the water to a boil, 10 cl of milk, 100 g of butter and salt.

Step 2

Remove from heat and add Maïzena. Stir energetically with a wooden spoon until a compact mass comes off from the edges of the pan.

Step 3

Put back on low heat to dry up the dough stirring, then remove the pan.

Step 4

Add the eggs one by one, stirring vigorously between each egg.

Step 5

Fill a socket pocket from the preparation and form small sprouts on a baking sheet covered with parchment paper. Bake 25 minutes at 200 ° C (th 6-7), then let cool in the oven off.

Step 6

Meanwhile, beat the cool cream in a bowl with the sugar, to get a whipped chantilly. Reserve cool.

Step 7

Prepare the chocolate sauce: melt the chocolate with 10 cl of milk in a bain-marie. Out of the heat, add, whisking, 25 gr of butter in pieces. To book.

Step 8

Garnish coffered cars with pastry or ice cream, then arrange them in the shape of a pyramid in a dish.

Step 9

Napper the pyramid of warm chocolate sauce and garnish with cream whipped.
