Ginger Carrot Soup

Step 1
Chop onion, slice carrots. Peel ginger and chop coarsely. Sauté everything in the oil.
Step 2
Deglaze with stock. Cover and simmer until soft, about 30 minutes.
Step 3
Add orange juice. Puree soup with a hand blender. Season to taste with salt and pepper.
Step 4
Toast sesame seeds without fat in a non-stick frying pan until they take on a light color. Remove and set aside. Pluck off coriander leaves.
Step 5
Serve soup with sour cream, sesame seeds and cilantro.

- 800 g carrots
- 20 g ginger
- 2 tablespoons rapeseed or sesame oil
- 8 dl vegetable stock
- 1 dl orange juice
- salt
- Pepper
- 2 tbsp Sesame seeds
- 1 sprig of coriander
- 4 tbsp Sour half cream
