Creme brulee


Step 1.0

Preheat the oven to 150 ° C (Th.5).

Step 2.0

Boil the milk in a saucepan. Remove from the heat, add the cream, the sugar, the vanilla sugar and the lemon zest.

Step 3.0

Then incorporate the egg yolks and heat over low heat (especially do not boil!)

Step 4.0

Pour the preparation into small individual ramekins. Place the ramekins on a high edges baking sheet filled with water (1 cm in height)

Step 5.0

Bake the plate and let the creams cook for 30 to 40 min in a double boiler

Step 6.0

To find out if the creams are cooked, plant a knife in one of the creams, it must come out clean.

Step 7.0

Let the ramekins cool out of the oven before depositing them in the refrigerator. Leave the creams cool for at least an hour.

Step 8.0

When the creams are cold, sprinkle with sugar and pass the ramekins for a few seconds under the very hot grill so that caramelise sugar, or use a kitchen torch.

  • 50 cl of liquid cream
  • 20 cl of milk (whole if possible)
  • 100 g of sugar
  • 1 sachet of vanilla sugar
  • Lemon (a zest)
