Chop onion and garlic. Cut the peppers in half and remove the seeds. Cut pepperoni, eggplant, zucchini and tomatoes into pieces.
Saute onion, garlic and eggplant in oil for about 5 minutes.
Add pepperoni and zucchetti and saute.
Cover vegetables and simmer over medium heat for 10-15 minutes.
Chop herbs and add with tomatoes.
Continue to simmer ratatouille for about 5 minutes. Season with salt and pepper.
