Stuffed eggplant


Step 1

Cut eggplant in half lengthwise. With a knife, cut the flesh of the eggplant in "X" shapes (so that the inside cooks evenly).

Step 2

Drizzle olive oil over the surface and bake at 250° for half an hour.

Step 3

With a tablespoon, remove the inside of the eggplant. Slice the flesh thinly.

Step 4

Blanch the onions over low heat for a good 15 minutes, then add the tuna.

Step 5

Add eggplant flesh and beaten egg. Season with salt and pepper.

Step 6

Mix everything together and fill the eggplant halves. Cover with tomato sauce and sprinkle with grated Gruyere cheese.

Step 7

Bake again for 5 to 10 minutes.

  • 250 g of tomato sauce

  • 100 g of natural tuna
  • 25 g grated Gruyere cheese
  • Pepper
  • Salt
