Step 1.0

Break the eggs by separating the yellows from the whites.

Step 2.0

In a bowl, beat the yolks with the sugar, then incorporate the mascarpone.

Step 3.0

Mount the whites until stiff. With a spatula, gently incorporate the whites into the previous mixture.

Step 4.0

Quickly immerse cookies in the coffee. Arrange them in regular layers at the bottom of a fairly deep rectangular dish.

Step 5.0

Cover with a layer of mascarpone cream then repeat the operation by alternating cookies and cream. Finish with a layer of cream.

Step 6.0

Reserve at least 4 hours in the refrigerator.

Step 7.0

Just before serving, sprinkle with bitter cocoa.

  • 300 g of spoon cookies (Saviardi)
  • 50 cl of unsweetened black coffee
  • 30 g bitter cocoa
